Delicious healthy vegetarian quinoa salad.  Perfect side dish or entree!  Quick and easy to make, but also healthy and delicious!

  • 1 Cup uncooked Quinoa
  • 1 Can Garbanzo Beans
  • 1 Medium Bell Pepper
  • 1 Celery Stalk
  • 1/2 Medium Cucumber
  • 1/4 Cup Olive Oil
  • 2 Tbs Apple Cider Vinegar
  • 1 Tbs Lemon Juice
  • 1 clove garlic


  • Prepare Quinoa in your pressure cooker or stove top according to package instructions
  • Rinse and drain garbanzo beans
  • Dice bell pepper, celery, and cucumber
  • Combine cooked quinoa, garbanzo beans, bell pepper, celery and cucumber in a large bowl
  • In a separate bowl mix garlic, vinegar, olive oil, and lemon juice
  • Add vinegar mixture to quinoa mixture
  • Refrigerate for at least 30 minutes and enjoy!
