Vegetarian Pumpkin Chili
Pumpkin is an incredibly popular add-in for fall recipes. Not only is it delicious, but it is extremely nutrient-dense. Pumpkin is loaded with Vitamin A, magnesium, potassium, iron, and Vitamin C.
Also, 1 cup of pumpkin is only 30 calories so it is a low calorie tasty add-in to recipes.
If you prefer meat in your chili, you can easily add ground turkey to this recipe. However, it is not necessary since the beans in this recipe add plenty of protein for a well-balanced meal.

Vegetarian Pumpkin Chili
Equipment
- Pressure Cooker
- Slow Cooker
Ingredients
- 1 TBS Olive Oil
- 4 Cloves Garlic minced
- 2 tsp Cumin
- 1/2 tsp Chili Powder
- 1 Can Pumpkin Puree
- 2 Cans Diced Tomatoes
- 1 Can Kidney Beans
- 1 Can Black Beans
- 1/2 Cup Diced Carrots
- 1 Medium Yellow Onion
- 1 Celery Stick
- 1 Cup Vegetable Broth
- 1 Medium Yellow or Red Pepper
Instructions
Sautee Mode
- Turn your pressure cooker onto sautee mode
- Add Olive oil, garlic and onion
- Cook for approximately 2 minutes or until fragrant
Prepare Your Pressure Cooker
- Add remaining ingredients to your pressure cooker
- Mix well
- Program Pressure Cooker to 10 minutes
- Manually release pressure and enjoy!
If you want to use a slow cooker instead of the pressure cooker, saute onions and garlic, add remaining ingredients, then cook on low for 4 hours.
