Nothing says the fall like pumpkin and chili. For an ultimate fall meal, this vegetarian pumpkin chili combines both into one delicious dish!

Pumpkin and chili may sound like an odd combo, but don’t knock it before you try it! The pumpkin flavor is mild, but it is a delicious sweet and savory combination.

The vegetarian pumpkin chili can be prepared in either a pressure cooker or a slow cooker. I personally like to use the slow cooker on days that I work late so I can walk in the door with dinner already prepared.

The pressure cooker is perfect for days that you have a little more time, but want dinner ready in under 20 minutes.

Either way, this recipe is healthy, hearty, and delicious!

Pumpkin is an incredibly popular add-in for fall recipes. Not only is it delicious, but it is extremely nutrient-dense. Pumpkin is loaded with Vitamin A, magnesium, potassium, iron, and Vitamin C.

Also, 1 cup of pumpkin is only 30 calories so it is a low calorie tasty add-in to recipes.

If you prefer meat in your chili, you can easily add ground turkey to this recipe. However, it is not necessary since the beans in this recipe add plenty of protein for a well-balanced meal.

If you are on the hunt for a new fall comfort food, this recipe is for you!
