Quinoa is a frequent ingredient in my meals because it is a healthy grain packed with protein, folate, iron, and fiber. Quinoa is an ancient grain that dates back to over 5,000 years ago!
This superfood pairs well with almost anything and is so easy to prepare. I typically use quinoa in place of rice in recipes, especially on days that I am eating vegetarian and want to increase the protein content of a meal.
As a mindful eater, I like to make sure that what I eat provides nutritional value and not just empty calories. Not only is quinoa packet with nutrients, but it also is a complex carbohydrate which is ideal for diabetics.

2 Minute Quinoa in Pressure Cooker
- Pressure Cooker
- 1 cup quinoa
- 1 cup water
- Add quinoa and water to pressure cooker
- Program to pressure cook for 2 minutes
- Allow pressure cooker to slow release for approximately 10 minutes
- Stir and enjoy!
