Are Eggs Good or Are They Bad For Us?

If you follow-along with medical literature, you will know this is an ongoing debate! The research changes constantly on whether or not the fat from eggs is harmful or protective.

Hard-boiled eggs are an excellent source of protein and fat, especially for vegetarians. With this recipe, you can cook a batch and use them throughout the week for a quick snack. You can add them to salads for more protein too!

The most recent studies found that people who eat more eggs tended to have higher cholesterol. However, these studies also found that people who ate more eggs also tended to eat more meat.

My take on this research is to eat eggs in moderation. Eggs are an excellent source of protein and fat. Vegetarians especially can add eggs to salads or as a quick snack to increase daily protein intake.

Eggs are an inexpensive and easy source of protein. So, I say go for it, but in moderation!

Pressure Cooker Hard-Boiled Eggs

With the use of your pressure cooker, it is so simple to make perfect hard-boiled eggs every time.

I use the Mealthy Pressure Cooker which comes with a steamer rack. Place 6 eggs on the rack, add 1 1/2 cups of water and use the egg function in your pressure cooker.

Cook for 5 minutes. Allow the pressure to naturally release for 5 minutes.

The most important step is placing your eggs into an ice bath to cool completely for at least 5 minutes. If you skip this step, you will struggle to peel the eggs which is such a pain!

Older eggs work better than fresh eggs, so if they are farm-fresh, wait at least a few days before using them.

Pressure Cooker Hard-Boiled Eggs

Cook perfect Hard-Boiled eggs with your pressure cooker!  Take the guess-work out of making eggs and avoid the struggle of peeling them.

  • 6 Eggs
  • 1 1/2 Cups Water


  • Add 1 1/2 Cups of water to your pressure cooker
  • Lay the eggs on your steamer rack 
  • Seal your pressure cooker and program to “eggs” for 5 minutes
  • Once cooking is complete, allow your pressure cooker to naturally release pressure for 5 minutes
  • Immediately place eggs in an ice bath for approximately 5 minutes
  • Peel and enjoy
    Or if you are making Easter Eggs, once they have cooled, it is time to dye them and decorate!
